Happy Friday everyone! I am bringing you a wonderful festive recipe in collaboration with the whey protein brand Whey Box. If you’re anything like me, you adore snacking and when the weather gets cold you always crave the sweeter treats. This is ok and sweet treats should definitely be enjoyed in moderation. However, to ensure your energy levels are at their optimal level throughout December, it is important to fuel your body with nutrients too.
One of my favourite snacks are nuts, all varieties! Almonds and cashews are my favourites though. However, for some, plain, unsalted and unroasted nuts can be extremely boring. So I have injected some festive spirit into an ordinary bag of nuts and created toasted gingerbread crunch. Gingerbread spiced nuts with a sugar-coated glaze. Delicious, crunchy and warming.
Like other plant foods, nuts provide a range of nutrients, including large quantities of healthy monounsaturated and polyunsaturated fats and moderate amounts of protein. Nuts are also a good source of dietary fibre and provide a wide range of essential nutrients, including several B group vitamins, vitamin E, minerals such as calcium, iron, zinc, potassium and magnesium, antioxidant minerals (selenium, manganese and copper) and much more! They’re a powerhouse of goodness.
A small handful of nuts makes an awesome mid-afternoon or mid-morning snack.
As an added infusion of gingerbread, I have used a sachet of gingerbread protein from Whey Box. Creamy, subtly spiced and naturally sweet. This protein adds creaminess to my porridge and infuses every dish with festive spice. This is an optional ingredient and you could substitute this for mixed spice and extra honey or sugar.
