Recipe: Synergy Boost Salad Dressing
Happy Friday everyone! This week I am back with another recipe, a more savoury one inspired by the glorious weather I have had in Blackpool. Living by the seaside isn’t always as glamorous as it sounds, in fact, it does rain the majority of the time here in the North West. We can either become sad about the weather or use it as an excuse to be productive and get our errands done. I have become accustomed to the miserable weather here in Blackpool.
We have had a few sunny spells here and there and they have inspired me to experiment with my salad dressings and fire up my dishes using colour, spice and nutrients. I am a huge lover of vegetables and I eat them every single day, I am a self-confessed veggie lover! Whenever I make a salad I have to ensure they are 1. delicious, 2. packed full of energy and 3. colourful. I think people have this bad connotation towards salad. Some people think salads are for people on ‘diets’, some people think salads are boring and lack flavour and some people think salads only contain 1 WHOLE iceberg lettuce. This is not true!
Salads are delicious and can be a side dish for the main meal. Salads can also be the main meal itself, all through piling the goodness high and varying the toppings and dressings. Have you been inspired by somewhere you have visited recently? Inject that inspiration into your salad! Through colour, flavour and diversity. Use the inspiration around you to inspire your food choices, it makes things a lot more exciting.
The synergy between you and your food should be something enriching, positive and creative. Don’t ever restrict yourself from experimenting or eating the foods you love. A salad for me always has a base, a protein source, lots of veggies and occasionally a carbohydrate source. My base is usually spinach or kale and my protein is sometimes – tuna, prawns, chicken, lentils or chickpeas and my carbohydrates are usually – quinoa, sweet potato chunks or rice. It depends on what I have leftover or what I fancy that day. Combine flavours, use the leftovers from the night before and decorate your plate with your favourite colours using nutrient dense deliciousness.

Salad Dressing Recipe
Tangy, sweet, packed full of flavour and guaranteed to enhance your salad!
- 1 tsp of Jake’s Boost Super Boost spread
- 2 tsp of lemon juice – fresh lemon juice works the best!
- 1 tsp of soy sauce, or your alternative – coconut amino’s, tamari.
- A sprinkle of salt and pepper
- A few pinches of paprika for spice and colour. I added extra on top for colourful decoration!
- Mix all of the ingredients together in a bowl and if the seed butter becomes too thick, add cold water to help the mixing process. The seed butter is dense in texture and is not your usual conventional butter, so ensure you mix thoroughly and add extra water as and when you need to. It depends on how you like your dressings! I prefer mine to go a long way and to cover my salad.
- Once mixed together, dress your salad and toss the goodness around to ensure all of the salad ingredients are dressed with your synergy dressing.
