A Hug In A Bowl – Chicken and Vegetable Broth

Happy Thursday everyone! This week I am bringing you a warming recipe packed FULL of goodness. This recipe is good to prepare a week in advance; prepare, cook and store in airtight containers in either the fridge or freezer for an emergency snack, lunch or evening meal. for an emergency snack, lunch or evening meal. As the days get darker and the nights become colder, food is something we need for fuel and warmth. It doesn’t require a lot of time and it certainly doesn’t require a lot of effort. This is a one pot wonder and ticks all of the boxes for me in the winter. It’s warm, full of nutrients, can be made in bulk and it can please the whole family.

This chicken broth can be customised with your favourite vegetables, lentils or even beans. Your choice! Experiment with flavour combinations and get creative. That is the wonderful thing about throwing everything into a pan and leaving it, you get a different outcome every single time. I can assure you, this will provide you with a hug, as the name suggests! So, whenever you’re feeling low, make sure you’re stocked up on chicken and vegetable broth and you’re half way there to feeling better.

Recipe Time! Ingredients & Method

I recently got a bread maker and bread has now become another staple at breakfast time with some eggs! Which is great. I have never been a huge fan of bread due to its processed ingredient list, however, now I have a bread maker I can experiment with ingredients and enjoy bread again! A nice toasted piece of bread goes perfectly with this broth or you could even pour the broth over some steamed rice or quinoa.

I know life can catch us by surprise and sometimes we get so busy that we forget to nourish our bodies in the good way. Take some time out this week to meal prep and get yourself organised for the week ahead. This isn’t time wasting! & don’t feel guilty for taking time away from work, we all need ‘me’ time, otherwise we would go insane!
