Jessica Bakes | Overnight Vanilla Cinnamon Oats

Back to normality after a crazy week of preparing for a wedding and getting back on track with my studies. Fueling my body with the correct foods and experimenting along the way is extremely important to me. I like to try different things and make food more interesting along the process.

This weeks post is all about the recent discovery I have come across. I have been meaning to try ‘’Overnight Oats’’ for a while and I was a little apprehensive in case it tasted a little like baby food. However, being a lover of oats and porridge I was pleasantly surprised and I could not wait to share my own recipe here on my blog!

For this simple recipe all you need is:

  • A jar or container for the overnight oats, the perfect size for the fridge. I re-used a jar for mine
  • A spoon
  • 1 ½ cups of rolled oats, your choice. I used Scottish rolled oats
  • 1 ½ cups of milk, any of your choice. I used skimmed milk for mine
  • 1 teaspoon of ground cinnamon
  • 2 teaspoons of vanilla

This recipe is simple and will take less than 5 minutes to prepare! Combine all the ingredients into one jar/bowl/container properly and store in the fridge overnight. This is the perfect recipe for a quick, healthy breakfast on the go. The oats absorb the milk and all the flavouring overnight and turn into creamy, gooey goodness!

Who would think that your breakfast could taste just like a creamy dessert?

After they have soaked overnight I topped mine with an array of different frozen fruits, nuts, seeds, my homemade granola, milled linseed, a generous drizzle of honey and two tablespoons of Total 0% Greek Yoghurt. I realised that adding the vanilla and cinnamon added an extra touch of flavour and made me feel fuller for longer as well as having the anti-inflammatory properties from the cinnamon and of course packed full of antioxidants.

Adding the Greek Yoghurt on top also added to the texture and made the overnight oats a lot creamier. When preparing the oats I used skimmed milk however, a combination of yoghurts or creams could be used alternatively to this. Have fun with this recipe and add lots of different flavourings and toppings. To your personal taste.
